Zelìa comes from pure Syrah grapes vinified in white. The grapes harvested early are softly pressed in order to extract a slightly colored juice. At the end of fermentation the wine undergoes at least 5 months of aging in steel and approximately 1 month of aging in the bottle before being marketed.
